Amarone Risotto

Dieses festliche Risotto mit Amarone habe ich zum ersten Mal in der Antica Bottega del Vino in Verona gegessen und war sofort begeistert.

Der Amaronewein ist hier eindeutig der Star dieses Gerichts und wird in der Gegend rund um Verona angebaut. Das besondere an diesem Wein ist, dass er aus getrockneten Trauben hergestellt wird, wodurch er sehr aromatisch schmeckt, aber auch eine leichte Süße zurückbehält.

Der Amarone gehört zu den Spitzenweinen aus Italien, die Veroneser sind sich aber nicht zu schade, dieses edle Tröpfchen auch für ein cremiges Risotto zu verwenden.

Somit ist in Verona nicht nur der Amarone sehr bekannt sondern auch das Amaronerisotto, das mittlerweile eines der beliebtesten Gerichte der Stadt geworden ist.

I tried this festive Risotto with Amarone for the first time in the Antica Bottega del Vino in Verona and was instantly impressed.

The Amarone wine is clearly the star of this dish and is grown in the area around Verona. The specialty about this wine is, that it is made out of dried grapes, so it tastes very fragrant, but also retains a slight sweetness.

The Amarone is one of the top wines from Italy, but the Veronese do not hesitate to use these noble drops for a creamy risotto.

Thus Verona is not only known for its Amarone but also for its Amarone Risotto, which has become one of the favorite dishes of the city.

Amaronerisotto

Zutaten für 2 Personen:

300 g Risottoreis

80 g geriebener Parmesan

1 Zwiebel

60 g Butter

1 Lorbeerblatt

Salz, Pfeffer,

1L klare Fleischbrühe

300 ml Amarone della Valpolicella

Zubereitung:

Die Fleischbrühe erwärmen.

Die Zwiebel fein hacken und mit dem Lorbeerblatt in 40g Butter andünsten.

Den Reis hinzugeben, ebenfalls andünsten, bis dieser glasig wird.

Mit Amaronewein ablöschen und diesen leicht bei mittlerer Hitze reduzieren. Nach und nach Brühe zugeben und unter leichtem Rühren garen.

Wenn der Reis bissfest ist, das Lorbeerblatt entfernen und 60g Parmesan und die restliche Butter unterrühren. Mit Salz und Pfeffer abschmecken. Das Risotto für einige Minuten bei geschlossenem Deckel ruhen lassen und anschließend mit restlichem Parmesan servieren.

 

Amarone Risotto

Ingredients for 2 people:

300g risotto rice

80 g grated Parmesan

1 onion

60g butter 1

bay leaf

Salt and Pepper

1L clear broth

300ml Amarone della Valpolicella

Preparation:

Heat up the broth and keep it warm. Finely chop the onion and sauté with the bay leaf in 40g butter.

Add the rice, also sauté briefly. Deglaze with Amarone and reduce over medium heat. Add broth gradually until the rice is al dente.

Remove the bay leaf and stir in 60g of Parmesan and remaining butter. Season with salt and pepper.

Allow the Risotto to rest for a few minutes with the lid closed and finally serve with the remaining Parmesan.
