Fenchel-Carpaccio

Carpaccio ist eine italienische Vorspeise und wurde um 1950 in Harry’s Bar in Venedig zuerst entwickelt.  Der Legende nach durfte die Stammkundin Contessa Amalia Nani Mocenigo auf Empfehlung des Arztes kein gegartes Fleisch mehr essen.  So kreierte der Inhaber Cipriani ein Gericht aus rohem Rindfleisch und benannte es nach dem berühmten venezianischen Maler Vittore Carpaccio der für seine leuchtenden Rottöne bekannt war.

Mittlerweile wird der Begriff Carpaccio nicht nur für Rindfleisch, sondern auch als Synonym für alle Speisen verwendet, die aus sehr dünn geschnittenen und marinierten Zutaten bestehen, wie Fisch, Gemüse oder Obst.

Dieses leichte Fenchel-Carpaccio harmoniert sehr gut mit den Speckwürfeln und ist eine ideale Vorspeise, wenn man seinen Gästen mal was überraschend Anderes bieten möchte.

Carpaccio is an Italian appetizer and was developed in 1950 at Harry’s Bar in Venice.  According to the legend, the customer Contessa Amalia Nani Mocenigo was recommended to eat no cooked meat by her doctor. So the owner Cipriani created a dish of raw beef and named it after the famous Venetian painter Vittore Carpaccio, who was known for his brilliant reds.

Meanwhile the term carpaccio is used not only for beef but also as a synonym for all products that are made of very thinly sliced and marinated ingredients, such as fish, vegetables or fruit.

This light fennel carpaccio harmonizes very well with the bacon and is an ideal starter, if you want to offer something surprisingly different to your guests.

Zutaten für 2 Personen:

1 Fenchelknolle

100g Speckwürfel

Olivenöl

1 EL Balsamico Essig

Pfeffer, Salz

1 TL Zitronensaft

Zubereitung:

Backofen auf 200 °C vorheizen.

Fenchel vom Strunk und Fenchelgrün befreien, in sehr dünne Scheiben schneiden und auf ein Backblech geben. Mit Olivenöl bepinseln und mit Salz und Pfeffer würzen.

Den Fenchel ca. 10 Minuten im Backofen rösten, bis die Rändern leicht zu bräunen beginnen.

In der Zwischenzeit die Speckwürfel in einer Pfanne knusprig braten.

Das Fenchelgrün klein hacken.

Den gerösteten Fenchel auf einem Teller anrichten und die Speckwürfel und das Fenchelgrün darüberstreuen.

Für die Marinade 2 EL Olivenöl, 1 EL Balsamico Essig, 1 TL Zitronensaft mischen und mit Salz und Pfeffer abschmecken.

Die Marinade über den Fenchel geben und servieren.

Recipe for 2 servings:

1 fennel bulb

100g diced bacon

Olive oil

1 tablespoon balsamic vinegar

Pepper, salt

1 tsp lemon juice

Directions:

Preheat oven to 200 °C.

Free the fennel from stalk and fennel leaves, cut into very thin slices and place on a baking sheet. Brush with olive oil and season with salt and pepper.

Roast the fennel for about 10 minutes in the oven until the edges begin to brown slightly.

Meanwhile, fry the bacon in a pan until crunchy.

Chop the fennel leaves finely.

Place the roasted fennel on a plate and sprinkle with the bacon and the fennel leaves.

For the marinade mix 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 tsp lemon juice and season with salt and pepper.

Pour the marinade over the fennel and serve.
