Boeuf Bourguignon

Das Boeuf Bourguignon ist ein klassisches Schmorgericht aus der französischen Küche und ist nach seinen beiden Hauptzutaten Rindfleisch (boeuf) und Burgunderwein (le vin bourguignon) benannt.

Der Braten wird über Nacht in Rotwein eingelegt und am nächsten Tag langsam geschmort, was das Fleisch besonders zart werden lässt, so dass man es mit der Gabel zerdrücken kann.

Für mich ein ideales Gericht für das Wochenende, an dem man es sich mit der Familie auf der Couch gemütlich machen kann, während das Essen vor sich hinköchelt und dann gemeinsam genüsslich verspeist.

Ich habe dazu Gnocchi gemacht, da diese allein mit der Sauce schon herrlich schmecken, Kartoffelbrei oder Bandnudeln passen aber auch sehr gut dazu.

The Boeuf Bourguignon is a classic stew of the French cuisine and is named by its two main ingredients beef (boeuf) and Burgundy wine (le vin bourguignon).

The roast is placed in red wine overnight and simmered slowly the next day, which makes the meat particularly tender, so you can crush it with a fork.

For me, an ideal dish for the weekend when you can make yourself comfortable with the family on the couch while your meal is slowly cooking on the stove to be enjoyed in company later on.

I made gnocchi as a side dish, since these alone taste great with the wine sauce, but mashed potatoes or pasta go very well with it, too.

oeuf Bourguignon

Zutaten für 4 Portionen:

1kg Rindfleisch zum Schmoren (Unterschale)

2-3 Knoblauchzehen

2-3 Zweige Thymian

1 große Zwiebel

250g Schalotten

100 g Speck

250g Champignons

2 Lorbeerblätter

1 Flasche Burgunderwein

2 Karotten

500 g Rinderbrühe

3 EL Pflanzenöl

30 g Butter

1 EL brauner Zucker

1 EL Mehl

Zubereitung:

Am Vorabend das Fleisch in große Würfel schneiden und in eine Schüssel geben. Die Zwiebel und den Knoblauch schälen, grob würfeln und mit dem Thymian und den Lorbeerblättern zum Fleisch geben. Den Rotwein dazugießen und die Schüssel über Nacht in den Kühlschrank stellen.

Am nächsten Tag das Fleisch aus der Marinade nehmen und trockentupfen. Die Karotten schälen und in kleine Würfel schneiden.

In einem Bräter das Pflanzenöl erhitzen und das Fleisch darin ca. 5 Minuten bei großer Hitze anbraten. Die Karottenwürfel dazugeben, mit Mehl bestäuben und mit der Rotweinmarinade ablöschen. Rinderbrühe dazugeben und mit Pfeffer und Salz würzen.

Die Hitze reduzieren und das Fleisch ca. 2 ½ bis 3 Stunden schmoren (mit der Gabel testen, ob das Fleisch weich ist, ansonsten noch etwas länger schmoren).

In der Zwischenzeit die Schalotten schälen, den Speck in dünne Scheiben schneiden und die Champignons putzen.

Butter in einer Pfanne erhitzen und die Schalotten darin goldgelb anbraten. 1 EL braunen Zucker darübergeben und karamellisieren lassen. Speck und Pilze hinzufügen und für ca. 5 Minuten mitbraten.

Die Pilzmischung ca. 10 Minuten vor Ende der Garzeit zum Fleisch geben und alles nochmals mit Pfeffer und Salz abschmecken.

Mit Gnocchi, Kartoffelbrei oder Bandnudeln servieren.

Boeuf Bourguignon

Ingredients for 4 servings:

1kg beef for stewing

 2-3 cloves garlic

2-3 sprigs of thyme

1 large onion

250g shallots

100 g bacon

250g mushrooms

2 bay leaves

1 bottle of Burgundy wine

2 carrots

500 g beef broth

3 tablespoons vegetable oil

30 g butter

1 tablespoon brown sugar

1 tablespoon flour

Preparation:

The evening before, cut the meat into cubes and place in a bowl. Peel the onion and garlic, coarsely dice and add with the thyme and bay leaves to the meat. Pour in the red wine and place the bowl in the refrigerator overnight.

The next day, remove the meat from the marinade and pat dry. Peel the carrots and cut into small cubes.

In a roasting pan, heat up the vegetable oil and fry the meat for about 5 minutes over high heat. Add the carrots, dust with flour and deglaze with the red wine marinade. Pour in beef broth and season with salt and pepper.

Reduce the heat and stew the meat for about 2 ½ to 3 hours (test with a fork, if the meat is tender, otherwise stew a little longer).

Meanwhile, peel the shallots, cut the bacon into thin slices and clean the mushrooms.

Heat butter in a pan and fry the shallots until golden. Sprinkle with 1 tablespoon brown sugar and let it caramelize. Add bacon and mushrooms and cook for about 5 minutes.

Pour the mushroom mixture to the meat about 10 minutes before the meat is done and season again with salt and pepper.

Serve with gnocchi, mashed potatoes or pasta.
